Some useful tips
Storage
Extra-virgin olive oil is a very precious and delicate foodstuff. It boasts extraordinary organoleptic properties that may be easily compromised if the product is not kept in proper conditions.
Light, heat and oxygen are the three enemies of oil, since they are all external factors that speed up the oxidation process that can affect the product due to the presence of oleic acid in it.
Oil should therefore be stored away from direct or indirect light sources, heat sources (especially from the stoves) and from any contact with oxygen in the air.
We suggest that you choose small dark glass containers which allow very little light to filter through, or stainless steel containers, always in small packaging, from 0.25 lt to 0.50 lt.
Packaging and temperature
The smaller the packaging, the more you can reduce the contact with the air. If a glass container is chosen, it is recommended to wrap it with some tinfoil, in order to protect it from direct light.
If you buy oil in large containers, we suggest transferring it in smaller ones immediately. Plastic containers, ampoules and ceramic containers shall absolutely be avoided.
To best preserve the aroma and flavour, it is also preferable to keep oil away from particularly strong foodstuffs or from products like cleaners, as it could easily absorb odours.
The ideal storage temperature is between 14° and 18°. Oil also fears low temperatures because they increase the risk of coagulation of the liquid.
